Candied Sweet Potatoes

4 large sweet potatoes (the dark yellow ones) (you can start with canned ones, but the real thing is so much better)

1/2 teaspoon salt

1/2 cup butter

1/2 cup brown sugar

marshmallows

Preheat oven to 350ºF. Peel sweet potatoes and cut into 1-1/2 inch chunks. Put in pan and cover with water. Add salt. Bring to a boil and cook for about 15 minutes. The potatoes should be not quite tender when tested with a fork. Lay them evenly on the bottom of a bake-and-serve dish. Sprinkle with brown sugar and butter. Cover with marshmallows. Bake for 10 minutes until marshmallows are brown.

There is nothing quite like ham and candied sweet potatoes. 
A little cornbread and you have a glorious meal.
