7 to 8 tablespoons bacon drippings

4 tablespoons flour (notice that flour is 1/2 the amount of grease)

1-3/4 cups milk

On medium high heat put bacon drippings in skillet. When the skillet is very hot, slowly add flour stirring constantly. Add salt and pepper. Stir until brown. Then add milk stirring constantly until thick.

Sausage Gravy

1 cup sausage

7 to 8 tablespoons sausage grease (supplement with bacon grease or oil if necessary)

4 tablespoons flour

1-3/4 cups milk

Crumble sausage in hot skillet. If sausage is sticking, add two tablespoons of bacon grease. Cook until sausage is browned. Slowly add flour stirring constantly. Stir until flour is browned. Then add milk stirring constantly until thick. Add salt and pepper if needed. 

Allen’s Story About Virginia’s Clothesline Gravy

Allen told the story about when Virginia first started making gravy. She got it too thick. When she tried to toss it out the back door for the dog, it was so thick that it hung on the clothesline.
